Easy Beef Shanks

This recipe came from my beautiful daughter in law, Carysa Carey, who is an amazing cook!

Prep time: 25 minutes, Cook time: 4 hours


Ingredients

2 beef shanks (about 2” thick)

1 large red onion, cut into 1/2” slices

6 cloves garlic

Salt

Pepper

3 tbsp Parsley (I used dry)

1 cup red wine or beef broth

1 tbsp Olive oilDirections


1. Heat skillet to medium-high heat. Salt and pepper shanks on each side. Pan fry each shank about 3 minutes on each side, or until browned.

2. Transfer shanks to instant pot or slow cooker. Sauté onion slices in olive oil until almost translucent.

3. Crush fresh garlic over top of shanks, distribute evenly. Place the sautéed onions on top of shanks, put parsley on top. Pour in broth or wine.

4. Slow cook for 4 hours on high or 6 hours on low.


Notes and tips:

•I used my pressure cookers “slow cook” option for this recipe. You can use your slow cooker on the low setting for 6 hours. If you want to pressure cook it, that is up to you but I’ve never had good luck with pressure cooked meat!

•Use the juices once it’s done cooking to make a sauce for the shanks when you go to serve it, or make a gravy to serve over mashed potatoes as a side dish.
