BBQ Beef Sandwiches
I have had so much fun trying out new things on my smoker, but these sandwiches turned out so good I had to share!
Ingredients-
Around 5 pounds Chuck Roast cut into chunks
1 can Coke or Pepsi
2 Cups of your favorite BBQ Sauce
2 tbsp dijon mustard
For the Rub-
1/4 cup brown sugar
1/4 cup sugar
2 tbsp salt
2 tsp pepper
2 tsp chili powder
2 tsp smoked paprika
1tsp garlic powder
1 tsp pepper flakes
1 tsp oregano
Pat dry meat, rub with mustard. Mix all of the dry rub ingredients and spread evenly over all sides of the meat and let it rest for 10-15 minutes. Heat smoker to 275 degrees and smoke meat for 3 hours. Then place meat into dutch oven. Pour soda and two cups of BBQ Sauce over smoked meat and cover. Put it back in the smoker for two more hours.
Pull it off the smoker and pull it apart. Serve on a bun with some coleslaw, It is so delicious!
This makes about 6 sandwiches. If you are serving this for a crowd double the recipe. The meat will shrink by about half.
It might sound like a long process but it is so worth the effort!
