Easy Sourdough Biscuits

I love biscuits, and so does my family. I have several favorite biscuit recipes, but this one is really handy when you don’t have a lot of time.

preheat oven to 400 degrees

Put a little dab of butter in an 8 inch cast iron pan and place in the oven to melt the butter. You can use any pan really just make sure the bottom of the pan buttered so they don’t stick

Sift 2 cups flour, add 1/2 tsp salt, 1 tablespoon baking powder, 1/4 tsp baking soda stir together with a whisk so it’s well incorporated.

Cut in 1/4 cup butter. I shave small pieces of butter in so its easier to mix and doesn’t clump. Stir and smash with a fork.

Add 3/4 cups sourdough discard.

Add 2/3 cups milk. (If you don’t have sourdough discard just use 1 cup milk or buttermilk.)

Stir together and knead until it’s all mixed well.

If the dough feels dry add a little more milk. If the dough feels too wet add a little more flour. If you would like it more sour put in a little more sour dough discard and less milk. There really isn’t a wrong way to make these biscuits, that’s why they are easy.

Roll out to about an inch thick and cut. I do this on a baking sheet to contain the mess, but on a board or your counter is fine too.

Place biscuits in the pan with the melted butter. Top each with a little butter if you like.

Bake for 12-15 minutes or until they are brown on top.
